Watermelon Coconut Sorbet with Simply Watermelon® Recipe

Ingredients:
- 2 cups Simply® Watermelon
- 6 oz. fresh raspberries (about 1 ½ cups)
- 1 can coconut milk, full-fat, unsweetened
- ½ cup shredded coconut, unsweetened
Instructions:
- In a bowl, whisk coconut milk until any solids and liquid are combined. Stir in Simply® Watermelon and shredded coconut.
- In a blender, add raspberries and combined coconut mixture and blend until smooth. Transfer to shallow freezer-safe container and freeze until desired serving consistency (about 2-4 hours).
- If sorbet has frozen solid, allow to thaw until desired consistency (about 30-45 minutes).
- Garnish with fresh watermelon slices, raspberries, coconut or a fresh sprig of mint. Serve immediately. Serves 4-6
